Donut Muffins
Another great recipe from King Arthur flour. These muffins taste like the cinnamon sugar coated cake donuts. I ate them from the bottom up... saving the buttery-sugary topping for last.
Here's the recipe from King Arthur and the blog post that shows the how-to. Dipping the warm muffins in butter and then cinnamon sugar was pretty fun. (Like the blue fingernail polish that matches my blue custard cup?)
The only changes I made to these muffins was to substitute whole wheat pastry flour for the all-purpose, reduce the sugar just a bit, and to use almond milk instead of cow's milk.
Looking at these pictures makes me want to go bake another batch!
